A

Abacus Beads
Used to be a festive dish in Singapore among the Hakkas. The main ingredients are taro or yam and tapioca flour, mixing together to form a dough and make into little abacus beads to signify wealth.

Abalone Noodle
Usually cooked using the small, string-like noodle. The main ingredient is of course abalone with minced pork meat.

Air Flown Rib Eye
Grilled and boneless beef steak that is a tender and flavorful that is cut from the rib section between the short loin and the chuck.

Almond Cream
A sweet and white cream-like dessert that comes with a nice almond smell. It is usually consumed by Singaporean after meal.

Almond Paste
A sweet and white paste-like dessert that comes with a nice almond smell. It is usually consumed by Singaporean after meal.

Aloo Gobi / Aloo Gobhi
Dry yellowish Indian curry that usually comes without the liquid sauce. It is a popular combination of aloo (potato) and gob(h)i (cauliflower) with spices and occasionally contains kalonji (sometimes called "onion seeds") and curry leaves. Other ingredients that are also used in variations include garlic, ginger, onion, coriander stalks, tomato, and cumin.

Aloo Tikki
A savory, hot and spicy Potato Cutlet that is collectively known as 'chaat’. It is a Vegetarian Indian snack that is very popular in India.

Asam Fish Head
A dish of Chinese and Indian roots where the head of red snapper fish, is semi-stewed in a sweet and sour thick curry with assorted vegetables such as okra and brinjals. Singaporean usually like to eat it with either rice or bread.

Ayam Bakar Sunda
Marinated and Grilled chicken that is tender and usually served with a squeeze of lime on top. It is a Malay delicacy.

Babi Pongteh
A non-spicy Nonya dish which makes use of pork, pig trotters and preserved soya beans to create a combination of sweet and savoury tastes.

Baked Salted Chicken
An Hakka dish made with a whole chicken wrapped in parchment paper soaked in a pot of coarse salt for simmering.

Basil Chicken with Egg and Soup
An Hakka dish with basil leaves mixed with rice and chicken served with a sunny side up egg and soup. This is considered by Singaporeans to be a very healthy food.

Basil Omelette
An Hakka dish with basil leaves mixed with beaten egg or egg mixture cooked in frying pan.

An Indian dish made with highly seasoned saffron rice with pieces of chicken, lamb or vegetables.

Bitter Gourd Seafood Bee Hoon
A mixture of prawn, fish, squid and bitter gourd boiled with thick rice vermicelli.

Hakka Tea Rice (客家擂茶)
A consortment of tea leaves (usually green tea), peanuts, mint leaves, sesame seeds, mung beans and other herbs, which are pounded or ground into a fine powder which is mixed as a drink, or as a dietary brew to be taken with rice and other vegetarian side dishes such as greens, tofu, and pickled radish.

It is a drinkthat is usually cool, refreshing, and a sweet drink with tapioca pearls sitting on the bottom of a clear cup. Sometimes the drink is made with fresh fruits, milk, and crushed ice to create a healthy milk shake. You can also find drinks that are made of powdered flavoring, creamer, water, and crushed ice.

Tandoori Chicken
It is a semi-fried chicken delicacy that originated in the Punjab region of the Indian subcontinent. The chicken is marinated in yogurt and seasoned with tandoori masala which is is moderately hot. however the heat is toned down to a mild taste level to suit most of the people. It is usually red or orange in colour.

Tandoori Prawn
It is similar to Tandoori chicken except prawn is used instead of chicken. The prawns are prepared by baking in a shallow baking dish and cover with the marinade which is also red or orange in colour.

Tapioca Cake
This is a chinese delicacy where a piece of tapioca covered in misture of egg and flour is deep fried until it turns golden yellow in colour.

Teh Tarik
This is a type of tea that is prepared using a unique technique where the tea is poured from a hand held high into a container held in a hand below. The tea is poured back and forth in this manner to create a thick froth. Aside from cooling down the tea to drinking temperatures, it is believed that this method mixes the tea with the condensed milk more thoroughly.

It is a Malay dish prepared by frying bean sprout and long beans with special chilli sauce.

Uttapam (ஊத்தப்பம்)
It is a dosa-like dish that is made by cooking ingredients in a batter made of a urad dal and rice that has been fermented. It is usually made with tomatoes or an onion-chilli mix; other common ingredient choices are coconut or mixed vegetables. They are sometimes called an Indian pizza or Indian pancake.

Vada Pav
It is a kind of Indian vegetarian fast food prepared by mashing or dicing potatoes, made into patties, coated and mixed with green chilies, ginger and a tadka (tempering) of mustard seeds and turmeric. These balls are then dipped in an herb-seasoned batter made with gram flour, then it is deep fried. The finished vada is then wrapped in bread and served with condiments such as chutney, red chili powder or green chilies (sometimes fried and salted). The chutneys are often made of coconut, tamarind pulp or garlic.

Vegetable Hyderabadi Biriyani
This is an Indian dish made using goat meat and rice and is a staple of Hyderabadi cuisine. This variety is popular as it is comes from the city of Hyderabad, India where it was traditionally used as a celebration dish.

Vegetable Kadai
This is an authentic Punjabi dish which is cooked with vegetables like french beans, carrots, cauliflower, tomatos onion, green peas and spices.

Vinegar Pig's Trotter
This a chinese dish where pig's trotter is mixed in black vinegar with ginger and simmmered for long hours.

Wanton Noodle
Cantonese noodle dish which is usually served in hot soup, garnished with leafy vegetables, and wonton. The types of leafy vegetables used are usually kailan also known as Chinese kale.

It is a dessert where water chestnut is mixed with sweet corn soup to produce a sweet and crunchy taste.

Water Chestnut Beancurd
It is a chinese dish where the beancurd is wrapped in deep fried crushed water chestnut.

Xi Yang Cai Soup (西洋菜汤)
It is kind of chinese soup simmered with Xi Yang vegetable.


Y

Yakitori (焼き鳥)
It is grilled chicken or different parts of the chicken, thighs, skin, liver, etc. speared on sticks, or skewered on a bamboo skewer and barbecued, usually over charcoal.

Yam Cream
A sweet and gray cream-like dessert that comes with a nice yam smell with lotus seed topping. It is usually consumed by Singaporean after meal.

Yam Kueh / Yam Cake
It is a very popular Chinese dish Singapore sold especially in the morning markets and dim sum shops. Despite the name Yam, it is not made from yam but from taro which is a corm. Taro cake is made by steaming small pieces of taro with rice flour, water and salt. It is suitable for vegetarians as it does not include any animal products except for its garnishings. It is usually garnished with dried prawns (which have been soaked, chopped coarsely and fried), deep-fried shallots, chopped stalks of fresh spring onions, sprigs of Chinese parsley, toasted sesame seeds and red chilis. It is served with a thick sweet soy sauce along with a spicy chili paste which is optional.

Yam Ring
This is a cantonese dish where the surrounding is made from deep fried yam and the centre is filled with stir fry of any combination of meat like pork, chicken ,prawn, vegetables and nuts. This dish is usually served during special occasion like wedding dinner.

Yang Zhou Fried Rice (扬州炒饭)
This a a Yang Zhou style fried rice made from cold leftover rice fried with other leftover ingredients. It is sometimes served as the penultimate dish in Chinese banquets.
